Oven Fries

This is a recipe I kind of made up, I looked at a few different ones online, and then went from there.

Fries

5 Yellow or Red Potatoes-I like yellow because they are bigger and easier to deal with for fries, but not the yukon gold, although those are delicious for mashed... that's another post!
4 T olive oil (more if you would like, it's really all about how much you want the seasonings distributed)
salt and pepper
italian seasoning (you could do the seasonings individually, but this is a lot quicker, and this way you don't end up with one really strong flavor)
Any other seasonings you desire

Wash and scrub the potatoes really really well, you are eating the skins.  Cut the potatoes, in half, then in half again, and then cut them into fries, however  big or small you like, the smaller they are the faster they cook, and crisper they get.
Put the potatoes in a bowl, pour the oil over top, and then sprinkle the seasonings over top, mix the fries until they are all evenly coated.
Line a cookie sheet.  I ALWAYS line my cookie sheets, with either foil or parchment paper, because we don't have a dishwasher and this way it's a ton easier to clean, so trust me, it's worth it.  And there is always a coupon for foil in the newspaper at least once a month. Do it!  Put the fries on the cookie sheet,(but still spray the foil, even though the fries are coated you still want to spray it, you never want fries stuck to foil , foil rips, no one wants to eat foil) make sure it' one layer, cook at 375 for around 35 min, or however long you like, it really depends on how thick you cut them, and how cripsy you like them, the best way to tell is to take the biggest fattest one you have, and smoosh it with a fork, if it crushes, they are done!  I like to have half big and thick and half thin, James likes crispy and I like fluffy and soft with a lot of potato in the middle. Take them out, and put more salt on them, trust me, that last little bit of salt makes all the difference! Eat with your favorite sandwich, or hot dogs, or burgers, or just alone, they are so good!

PS  I suck a picture taking, so none for this post, I will have some next time I make them!!!

Sidenote

With the insides of the rolls from the Philly Cheese Steaks I smashed them down and toasted them in the oven, then spread them with avocado and that is what our son had for lunch while we had the yummy sandwiches, everyone wins!!

Philly Cheese Steak Sandwich

This was so good!! It was kind of on whim that I made it, I was at the store, and I had seen the recipe online the day before, so I just got what I had remembered, and went from there, but let me tell you.  It turned out so well!!

Philly Cheese Steaks

1 lb ground beef (if you want to serve more than 3 people you will need more, well, I guess only if you have a husband like mine, he is all about meat meat meat! he wants as much meat in his sandwich as possible)
1 small red onion (yellow works too, it's less sweet though) Chopped or sliced, depending on how big you like the pieces
1 green bell pepper, chopped
1 cup beef stock (I only had chicken stock, a little different, but it will work)
2 T steak sauce
4 dinner rolls (I got some of the premade ones from Smith's they are so good!)
1 T butter
1 T flour
1 C milk
1 C provolone, shredded (I can't ever find a brick of it, so I buy slices and cut them up)

Brown the beef, add onion and pepper, cook 2 min or until vegi's are a bit soft.  Add stock and steak sauce.  Season with salt and pepper.  Boil 5 min or until all liquid is gone.
While the meat cooks, cut rolls in half, remove center of rolls so there is a good base for the meat.  Turn oven to broil and toast the rolls for about 2 min.
Melt  butter, add flour and make a rue. Whisk in milk, and watch very carefully, it will scald and boil over.  Slowly mix in cheese until creamy.
Once you are ready spoon meat into the roll, and then scoop some cheese on top, and enjoy while it's hot.  SO GOOD!  Photographic evidence:

This would also go really well with my home made french fries, which shall be my next post, soon to come!!!

Welcome!

Welcome to our new blog project!
James has been tellling me for a while now that I should start a cooking blog, everytime I make something he like he reminds me of it :)  But I was never quite convinced, until today when he mentioned that maybe we should do a shared blog, where I talk about my cooking exploits and he can review movies.  I got very excited, and he laughed at me.  It was a precious moment.  So let me introduce us!
I am Amanda, I LOVE to cook, and I try and do it twice a day.  Breakfast is not my thing, I don't like to eat in the morning, and niether does James, so we just don't.  But lunch and dinner are a ton of fun!  We have a beautiful little boy, and a great life!  I hope you enjoy this blog, I am going to share my recipes, cooking tips, nifty ideas, table setting and ect!  Have a wonderful day!
