Philly Cheese Steak Sandwich

This was so good!! It was kind of on whim that I made it, I was at the store, and I had seen the recipe online the day before, so I just got what I had remembered, and went from there, but let me tell you.  It turned out so well!!

Philly Cheese Steaks

1 lb ground beef (if you want to serve more than 3 people you will need more, well, I guess only if you have a husband like mine, he is all about meat meat meat! he wants as much meat in his sandwich as possible)
1 small red onion (yellow works too, it's less sweet though) Chopped or sliced, depending on how big you like the pieces
1 green bell pepper, chopped
1 cup beef stock (I only had chicken stock, a little different, but it will work)
2 T steak sauce
4 dinner rolls (I got some of the premade ones from Smith's they are so good!)
1 T butter
1 T flour
1 C milk
1 C provolone, shredded (I can't ever find a brick of it, so I buy slices and cut them up)

Brown the beef, add onion and pepper, cook 2 min or until vegi's are a bit soft.  Add stock and steak sauce.  Season with salt and pepper.  Boil 5 min or until all liquid is gone.
While the meat cooks, cut rolls in half, remove center of rolls so there is a good base for the meat.  Turn oven to broil and toast the rolls for about 2 min.
Melt  butter, add flour and make a rue. Whisk in milk, and watch very carefully, it will scald and boil over.  Slowly mix in cheese until creamy.
Once you are ready spoon meat into the roll, and then scoop some cheese on top, and enjoy while it's hot.  SO GOOD!  Photographic evidence:
