Oven Fries

This is a recipe I kind of made up, I looked at a few different ones online, and then went from there.

Fries

5 Yellow or Red Potatoes-I like yellow because they are bigger and easier to deal with for fries, but not the yukon gold, although those are delicious for mashed... that's another post!
4 T olive oil (more if you would like, it's really all about how much you want the seasonings distributed)
salt and pepper
italian seasoning (you could do the seasonings individually, but this is a lot quicker, and this way you don't end up with one really strong flavor)
Any other seasonings you desire

Wash and scrub the potatoes really really well, you are eating the skins.  Cut the potatoes, in half, then in half again, and then cut them into fries, however  big or small you like, the smaller they are the faster they cook, and crisper they get.
Put the potatoes in a bowl, pour the oil over top, and then sprinkle the seasonings over top, mix the fries until they are all evenly coated.
Line a cookie sheet.  I ALWAYS line my cookie sheets, with either foil or parchment paper, because we don't have a dishwasher and this way it's a ton easier to clean, so trust me, it's worth it.  And there is always a coupon for foil in the newspaper at least once a month. Do it!  Put the fries on the cookie sheet,(but still spray the foil, even though the fries are coated you still want to spray it, you never want fries stuck to foil , foil rips, no one wants to eat foil) make sure it' one layer, cook at 375 for around 35 min, or however long you like, it really depends on how thick you cut them, and how cripsy you like them, the best way to tell is to take the biggest fattest one you have, and smoosh it with a fork, if it crushes, they are done!  I like to have half big and thick and half thin, James likes crispy and I like fluffy and soft with a lot of potato in the middle. Take them out, and put more salt on them, trust me, that last little bit of salt makes all the difference! Eat with your favorite sandwich, or hot dogs, or burgers, or just alone, they are so good!
